easy apple cake recipe

Guests can help themselves to produce in the orchard, fruit area and kitchen garden, but soon the bounty will be over. So I have decided to cook up a few bucketfuls of apples to pop in the guests freezer for a taste of sunshine in the cosy winter months.
I presume that most people know how to make a crumble so here is a recipe for quick apple cake instead...

150 g butter melted
2 cups apple (stewed - all ready in the freezer!)
1 cup sugar
2 eggs
2 cups self-raising flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 cup mixed nuts chopped (optional)

Simply
Place all ingredients into a bowl and stir until well combined.
Then add nuts or raisins if desired.
Pour the mixture into a spring form tin (or normal tin lined with grease proof paper) and bake for 40-45 minutes at 140C.

Hope you enjoy it!
